Fluffy Pancakes with Warm Bananas & Peanut-Honey Sauce {RECIPE}

Thought i’d share what’s on our dinner table this evening.
Of course it’s super easy, super yummy & frugal! : )

Fluffy, Yummy Pancakes with warm bananas & peanut-honey sauce
(with a surprising, secret ingredient
& NO added sugar!! : ) 

PANCAKES:

Ingredients

3/4 cup milk
2 tablespoons white vinegar
white vinegar!! yup white vinegar!! not just AWESOME for cleaning!!! : )
1 egg
1 cup all-purpose flour
2 tablespoons white sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons butter, melted

Add the vinegar to the milk and let sit for 10 minutes.
Whisk in the egg.
Add all the dry ingredients, plus finally the melted butter.
Then whisk until smooth.

Preheat a nonstick pan, griddle or skillet and spray with cooking spray.
Using a ladle spoon around half a ladle of the pancake batter onto the skillet.
Turn over once bubbly-holes are beginning to appear all over.

While cooking the pancakes prepare the sauce and bananas.

SAUCE:

Whisk together 1 tbsp of milk, 1/2 cup of honey & 1/4 cup of peanut butter in a jug.
Then melt together. (i put ours in the microwave for about 30 seconds but you could  put the jug to sit in hot water if you prefer.)
Stir to combine.

BANANAS:

Peel, slice in half long-ways, then half width-ways.
While you’re cooking your last batch of pancakes place the bananas on the skillet, sliced side down. Cook until slightly brown (about 30 seconds), turn and cook for about another 30 seconds on the other side.

The bananas will become slightly caramelized, slightly gooey and delicious!: )

Serve warm & enjoy!
